Now add some cold water to it and filter the prepared chenna through a muslin cloth. Tie the cloth and drain off the excess water thoroughly.
Add cornflour and flour to the chenna and mix well. Mash it until the mixture becomes smooth and soft. Now take small portions of it, give it a round shape and flatten it gently. Keep in mind that the balls should not be too thick, because their size will increase after cooking.
Put water and sugar in equal quantity in a big vessel and boil it on high flame. After the syrup boils, add reetha water to it. Now carefully put the prepared Rasmalai balls in the syrup. Cover the vessel and let them cook thoroughly. When the balls start rising, press them lightly, so that they can absorb the syrup properly.
Heat milk in a separate vessel. There is no need to boil it too much. Put some strands of saffron in it and leave it for some time. With this, the color and aroma of saffron will dissolve well in the milk. Slowly take out the Rasmalai cooked in the syrup and put it in the saffron milk. Let the Rasmalai remain in the milk for some time, so that it can absorb the flavor of the creamy milk properly.
Now garnish the prepared Rasmalai with finely chopped pistachios and almonds. If you want, you can also add some rabri on top to make it more rich. Serve the Rasmalai after cooling it in the refrigerator for a few hours. The whole family will definitely like the taste of cold and creamy Rasmalai on the occasion of Rakshabandhan.
