Material

for base
Almonds – ½ cup
Cashew – ½ cup
Makhana – 1 cup
Dates – 8 to 10
Ghee – 1 tablespoon
Cardamom powder – ¼ tsp

For the creamy layer

Cream Cheese – 200 grams
Thick fresh curd – ½ cup
Fresh cream – ½ cup
Honey – 3 tbsp
Saffron – 8 to 10 threads
Lukewarm milk – 1 tablespoon
Cardamom powder – ½ tsp
Finely chopped almonds and pistachios – 2 tablespoons

Method

  1. First of all, heat a pan and lightly fry makhana, almonds and cashew nuts. Take care that the dry fruits do not burn too much. Let them cool and then put them in the mixer and grind them coarsely.
  2. Now add deseeded dates and cardamom powder and blend again. When the mixture becomes a little sticky and starts joining together, add one tablespoon of ghee to it and mix well.
  3. Line a small round cake tin or container with butter paper. Add the mixture of dry fruits to it and press it well with the help of a spoon or glass. Try to ensure that the base is of equal thickness everywhere. Keep it in the refrigerator for 30 minutes.
  4. Add cream cheese, thick curd and fresh cream in a bowl and beat well. Now add honey and cardamom powder to it. Soak saffron in one spoon lukewarm milk for 5-10 minutes and add it to this mixture.
  5. Add finely chopped almonds and pistachios to the cream mixture and mix gently. This will also add a slight dry fruit crunch to the creamy layer.
  6. Remove the dry fruit base from the refrigerator and pour the cream mixture over it. With the help of a spatula or spoon, level the upper surface well.
  7. Now keep the cake in the refrigerator for at least 5-6 hours. It can be allowed to set overnight for better results. Keep in mind that this is a no-bake cheese cake, so it's important to give it time to chill properly.
  8. Once set, carefully take out the cake. Garnish with almonds, pistachios, cashews and saffron. It can be cut into small pieces and served in the bhog thali of Janmashtami.
