Secret recipe to make Mathura Peda
Prepare instant mawa: Heat ghee in a heavy bottom pan on low flame. Now add lukewarm milk to it and mix well. After this, add milk powder little by little and keep stirring continuously so that lumps do not form. In 2 to 3 minutes it will thicken and take the form of mawa.
Make the mauve color golden: This is the biggest secret step of Mathura Peda. Fry the mawa on medium-low flame while stirring continuously until its color turns dark golden brown. If the mawa seems dry then you can sprinkle 1-2 spoons of ghee or milk in between.
Add aroma and flavor: When the mawa starts giving off a wonderful aroma and the color becomes darker, then add saffron milk, cardamom powder and a pinch of nutmeg powder to it. Turn off the gas and take out the mixture in a plate and let it cool slightly.
Add Sweeteners: Keep in mind that the mixture should not cool completely, just be lukewarm enough to be touched with the hand. Now add brown or strong to it. Adding sugar to hot mawa can melt it and dilute the mixture, hence mix it in lukewarm mawa only.
Shape: Now apply some ghee on the palm and take small portions from the mixture. Then shape it. Mathura Peda is ready to offer to Lord Krishna.
