You can prepare soft and spongy Dhokla at home by following some easy steps.
Instead of buying Dhokla from the market, it is much easier to make it at home. For this you will need gram flour, semolina, curd and some common spices. In a large vessel, add gram flour, semolina, curd, salt, sugar, turmeric and ginger-green chilli paste. Mix everything well. Now prepare a smooth batter by adding water little by little. Keep in mind that the batter should not be too thick or thin. Keep the batter covered for about 10 to 15 minutes. This will set the semolina and gram flour well and the texture of the dhokla will improve.
Now add 2 to 3 cups of water in a big vessel or steamer and heat it. Grease the tray or tin in which you want to make Dhokla by applying some oil.
When the water starts boiling well, add lemon juice and eno to the batter. Add one spoon of water over it and immediately beat the batter well in one direction. After adding eno, do not keep the batter for long, rather pour it into the tray immediately.
Put the batter in an oiled tray, place it in the steamer and cover it. Steam it on medium to high flame for about 15-20 minutes.
After about 15 minutes, check the dhokla by inserting a knife or toothpick. If it comes out clean, then understand that the dhokla has been cooked well. Take out the tray and let it cool for some time.
Now heat oil in a small pan. Add mustard seeds, curry leaves and chopped green chillies to it. When mustard seeds start crackling, add about half a cup of water and one spoon of sugar. After the mixture comes to a boil, turn off the gas. Cut the cooled dhokla into desired shapes and pour the prepared tadka over it. Finally garnish with finely chopped coriander.
