Material
Poha (thin) – 2 cups
Makhana – 1 cup
Peanuts – ½ cup
Roasted gram – ½ cup
Cashew nuts – ¼ cup
Raisins – 2 tbsp
Oil – 2 tbsp
Curry leaves – 10-12
Green chilli – 2 finely chopped
Turmeric – ½ tsp
Red chilli powder – ½ tsp
Coriander powder – ½ tsp
Dry mango powder – 1 tsp
Black salt – ½ tsp
Common salt – as per taste
Sugar or powdered sugar – 1–1½ tsp
Asafoetida – 1 pinch
Chaat masala – ½ tsp
Method
- Heat a large pan over low-medium heat. Add poha to it and fry it for 4-5 minutes while stirring continuously, until it becomes slightly crisp. Take it out in a plate.
- In the same pan, add 1 tsp oil and fry the makhanas for 4-5 minutes. Then add peanuts, roasted gram and cashew nuts and fry until golden and crisp.
- Add remaining oil. Add asafoetida, curry leaves and green chillies and fry for a few seconds. Lower the flame and add turmeric, red chilli, coriander powder and black salt. Fry the spices for a few seconds only so that they do not burn.
- Now add roasted poha, makhana, peanuts, gram and cashew nuts and mix well. Turn off the gas. Now add dry mango powder, chaat masala and powdered sugar and toss well. Finally add raisins. Let the namkeen cool completely and then store in an airtight container.
A small trick to get taste like Haldiram's
To keep the sweet and sour taste balanced, add dry mango powder and sugar after turning off the gas. If you wish, you can also add 1-2 pinches of anardana powder – this will make the taste more spicy.
