Life Style Life Style : Nolan Gur Payesh is a sweet prepared during special festivals and is a kheer made of rice and dates. Its natural sweetness will make your day special. If you want to make a special sweet which is different from regular kheer then you can make this Bengali Prasad recipe.

– First of all, soak the rice in water for 30 minutes. Be careful not to wash the rice too often as we don't want to remove too much starch.

Then filter the rice and keep it in a plate to dry. Pour ghee over soaked rice, stir and keep aside.

Soak the raisins in some water to make them swell. Now heat ghee in a pan and fry the cashews on medium flame until they turn golden brown. Remove cashews from the pan and keep aside.

Heat the container, add milk and boil. After boiling, let the milk boil on low flame. Stir continuously to prevent the milk from sticking to the bottom or sides of the container. Now add rice to milk and keep cooking on low flame until the rice is completely cooked.

Keep the flame low and keep stirring the rice continuously to prevent it from burning. Check the rice after cooking it for 10 minutes. Rice should be very soft.

When the payesh becomes thick, add brown sugar, salt, raisins and cashew nuts and mix well. Jaggery starts melting and its sweetness makes Payesh sweet. Remember that jaggery can be mixed in payesh only on off flame.

Your raw payesh is ready. Offer it hot or cold as per your wish to Mata Brahmacharini and then distribute the Prasad.
