Puran Poli Recipe: Puran Poli is a popular Maharashtrian sweet bread made with flour, lentils, jaggery and cardamom. Puran Poli is prepared on Gudi Parva, Ugadi and every family festival and auspicious occasion in the Vindhyachal mountain range and the plateau south of Narmada Maiya in the triangular region called Deccan from the Arabian Ocean to the Bay of Bengal. It is also served as a dessert and even with salty vegetables with strong spices, the aroma of cardamom remains in it and jaggery gives a touch of sweetness. Ghee is used with open hands.

Material : –

Gram dal 1 cup, wheat flour 1 cup, jaggery sugar 1 cup, ground cardamom 14 tsp, ground nutmeg 14, turmeric powder 14 tsp, ghee/oil for frying and greasing.

Method : –

Wash the lentils. Then after soaking in water for 12 hours, drain the water, add 3 cups of water and cook in the cooker on low flame for 6-7 whistles. After the cooker cools down, add nutmeg, cardamom, jaggery or sugar and grind it coarsely. Mix wheat flour little by little with water and knead it. Now divide it into equal parts and make balls and roll them. Place a portion of the dal mixture on the grate. Lift the roti from the edge, shape it into a ball, flatten it and roll it again. Apply a light layer of ghee or oil on the hot pan. On this, fry the Puran Poli on low flame till it becomes golden brown from both the sides. Remove from the pan and keep on a plate. Similarly prepare the remaining Puran Poli also. Apply as much ghee as you want on top.
