To make this super easy and delicious Kashmiri Mutton Yakhni recipe, all you need is mutton, curd, cardamom, cloves and cinnamon. This Kashmiri Mutton recipe is mostly made during celebrations. Mutton recipe has a wonderful aroma of spices which is the essence of this delicious curry. The term 'Yakhni' refers to the saffron and curd based mutton broth that usually forms the base of most gravies, broths and pulaos. If you want to enjoy its taste to the fullest, eat it with plain boiled rice.

500 grams chopped mutton

5 green cardamoms

1 inch cinnamon stick

1 bay leaf

salt as required

1 teaspoon red chili powder

1 teaspoon turmeric

2 spoon milk

350 grams curd

3 cloves

1 teaspoon dry ginger powder

2 teaspoons fennel

2 red chillies

150 grams ghee

2 pinches saffron

wash and clean mutton

Wash and clean the mutton and keep aside. Pour some hot water over the mutton and leave it for 5-7 minutes. Now, discard the water and wash the mutton again.

Roast whole spices

Heat ghee in a deep bottomed pan. Add bay leaves, cinnamon, cardamom, cloves, whole red chillies and cook on low flame until the spices start crackling. Make sure you add the whole red chillies at the end, otherwise they will turn black.

Add mutton and spices

Now add mutton, turmeric, salt (you can add as per your taste) and fry on medium flame for 5-7 minutes. Now reduce the flame and cook covered until the mutton becomes soft and cooked completely. If you feel need, you can also add some water.

Add curd, fennel and ginger powder

Beat the curd well and add to the mutton. Make sure the mutton is uncovered and the flame is on lowest. Now grind fennel, add dry ginger powder to it and mix in mutton.

Add red chilli and saffron milk to your Kashmiri Mutton Yakhni

Add red chili powder and cook until the mixture thickens. Now dissolve saffron in milk and add it to mutton. Stir for 2-3 minutes, remove from flame and serve Kashmiri Mutton Yakhni hot.
