150 grams roasted peanuts

5 green cardamoms

3 tbsp sesame oil

100 grams ground jaggery

water as required

Step 1 Dry roast the peanuts

If you are using unroasted peanuts, then keep a thick bottomed pan on medium flame. Add peanuts in this pan to roast. Fry the peanuts while stirring on low flame for about 5 minutes or until they become crunchy.

Step 2 Scrub the roasted peanuts and remove the skin.

Place the peanuts in a plate and let it cool. When they cool, rub the peanuts between your fingers so that the skin comes off easily. Take out the peeled peanuts in another plate.

Step 3 Make jaggery syrup for chikki

Now, place a heavy bottomed pan on medium flame and add some water into it. Add jaggery to this pan and stir it with a spoon or spatula until the jaggery dissolves completely. Let the jaggery syrup boil on medium flame, stirring it frequently. Keep mixing until small bubbles appear and it reaches a firm state. Then reduce the flame.

Step 4 Add peanuts to jaggery syrup

Now, add peanuts and cardamom to the pan and take it off the flame. Let this mixture cool down a bit. Meanwhile, grease a tray or plate with some oil. You can use sesame oil for more flavor or use any oil for greasing.

Step 5 Once cooled, cut into pieces

When the peanut and jaggery mixture is cool enough to be handled with hands, mold it into small balls or slabs and place them on a greased plate or tray to cool and harden. Now you can store them in an airtight container. These can be eaten for about 2 weeks.
