1/2 cup pumpkin
3 cups water
1/2 teaspoon red chili powder
4 green chillies
1/2 cup curd
salt as required
1 cup carrot
1/2 cup raw greens
1/2 teaspoon turmeric powder
1 cup coconut
2 pinches cumin
2 teaspoon coconut oil
10 curry leaves
Step 1 Prepare the Masala Paste
Avial recipe is a healthy mix of fully cooked vegetables with some mild spices. To make this easy vegetable recipe, take a grinding jar and add red chilli powder, coconut and green chillies. Also, add cumin seeds and 4-5 tbsp water. Grind together until it becomes a smooth paste, add more water if it is too thick.
Step 2 Cut vegetables and soak in lukewarm water
To make the vegetables adulterant-free, soak them in a vessel with lukewarm water with a pinch of turmeric and salt for 30 minutes. Then, wash the unpeeled vegetables under running water and cut them into thin pieces in a large bowl. Now take a shallow pan and heat it on medium flame.
Step 3 Boil the vegetables until soft and add the masala paste
Add the remaining water to the pan and heat until the water boils. Then put the chopped vegetables in water and add turmeric powder. Sprinkle some salt and mix the ingredients well. When the vegetables are soft and cooked well, add the previously prepared paste and mix well with the vegetables. Cover the pan with a lid.
Step 4 Mix curd with vegetables and garnish before serving
Cook for another minute until the vegetables completely absorb the coconut masala paste. Then add curd and mix the vegetables well. Cook for another minute to mix the ingredients well. Garnish with coconut oil and curry leaves. Serve immediately.
