Sausage and Pea Pie Recipe

Life Style: Sausage and Pea Pie is a continental side dish recipe made using pork sausage, potatoes, onions, ricotta cheese, peas, spinach and zucchini. Try this interesting recipe for your dinners, buffets and anniversaries.

500 grams chopped, peeled potatoes

2 cloves finely chopped garlic

1 pinch chilli flakes

250 ml white wine

3 cups spinach

40 grams melted unsalted butter

2 tbsp chopped mint

1 finely chopped onion

450g chopped pork sausage

1 tablespoon finely chopped rosemary leaves

2 grated zucchini

1 cup frozen peas

120 grams ricotta cheese

Step 1

Mixed lettuce leaves, to serve Place the potatoes in a saucepan and cover with cold water and a pinch of salt. Place over medium-high heat, bring to a boil, then cook for 15-20 minutes until softened.

Step 2

Meanwhile, heat oil in a large pan over medium heat. Cook the onion and garlic, stirring, for 3-4 minutes, until very soft.

Add the sausage, peppers and rosemary and cook, stirring, until the sausage is browned, 3-4 minutes. Add the wines and cook for 1-2 minutes, until almost evaporated.

Add the vegetables and cook for 2 minutes, until all the liquid from the vegetables has evaporated. Season well and keep aside.

Step 5

Mash the potatoes until smooth, then add the butter, ricotta and mint. Apply spices. Divide the pie filling among four, 2 cup (500 ml) pie dishes or ramekins and top with the mash.

Step 6

Scrape the surface with a fork, then let the pie brown under the hot grill for 4-5 minutes. Serve with lettuce leaves.
