Life Style: 4 sweet potatoes (about 200 grams each), cleaned
1 x 395g Taco Mix Beans in Spicy Tomato Sauce
4 spring onions, finely chopped
75 grams Manchego, grated
1 x 242g Pot Crunchy Salad
Preheat the oven on Gas 7, 220°C, Fan 200°C. Pierce the sweet potatoes all over with a fork and place on a plate. Microwave on full power for 8 minutes, then halve and set aside to cool for 5 minutes.
Halve the potatoes and scoop out the pulp, keeping the peels aside. Cut the pulp into cubes and add to a bowl. Mix beans and add sauce and half of spring onion.
Put the peels in a roasting tin. Divide the bean and potato mixture among them, then top with the remaining spring onions and Manchego. Bake in the hot oven for 10 minutes until the skin is crisp and the cheese is melted. Serve with salad.
