Benne Dosa recipe: Make Karnataka’s buttery delight at home

New Delhi: Benne Dosa, a cherished delicacy from Karnataka in southern India, is renowned for its rich, buttery flavour. The term “Benne” means “butter” in Kannada, and true to its name, this dosa is generously prepared with butter, elevating its taste to new heights. A staple of South Indian cuisine, Benne Dosa is typically served alongside coconut chutney, spicy chutney powder, and sambar. Its golden-brown hue and delicate crispness make it a visual and culinary delight.
Unlike the traditional dosa, Benne Dosa is made using ingredients such as beaten rice (poha) or semolina, which contribute to its soft interior and crisp exterior. Cooking with butter not only enhances its flavour but also releases a distinctive aroma, making it truly exceptional.
Benne Dosa Recipe
Ingredients:
1 cup raw dosa rice
½ cup urad dal (split black gram)
2 tbsp chana dal (optional, for added crispiness)
2 tbsp beaten rice (poha)
1 tsp fenugreek seeds (methi)
Salt, to taste
Water
Butter or ghee, for cooking
Instructions:
Rinse the raw rice, urad dal, chana dal, poha, and fenugreek seeds thoroughly, and soak them in water for 4–6 hours.
Drain the soaked ingredients and grind them into a smooth batter, ensuring a medium-thick consistency.
Add salt to the batter and let it ferment for 8–12 hours in a warm place until it doubles in volume.
After fermentation, stir the batter. If it is too thick, add a small amount of water to achieve a pouring consistency.
Heat a dosa tawa over a medium flame and lightly grease it with butter or ghee.
Pour a ladleful of batter into the centre of the tawa and spread it evenly in a circular motion to form a thin dosa.
Add a small amount of butter around the edges and on top of the dosa to enhance its crispiness.
Cook the Benne Dosa over medium heat until the edges turn golden brown and crispy.
Once cooked, serve the Benne Dosa hot with coconut chutney or sambar.
