New Delhi: The superfood that’s on everybody’s grocery list nowadays is makhana! These makhanas—also known as fox nuts or lotus seeds—are a healthier alternative that everyone’s raving about. They are a nutritional powerhouse, low in calories and high in protein, making them perfect for those trying to lose a few inches or simply eat healthier. Plus, they can be used in a variety of delicious recipes!
Makhanas are packed with essential nutrients such as calcium, potassium, magnesium, iron, and phosphorus. They are also a great source of antioxidants, which help combat free radicals in the body. Their high fibre content aids digestion, and because makhanas have a low glycaemic index, they won’t cause a spike in blood sugar levels.
Here’s a step-by-step guide on how you can grow your own makhanas at home!
How to Grow Makhana at Home
Follow these steps carefully to grow the best-quality makhana. Be patient—it takes time!
- Prepare a small pond or pool in the area where you want to grow makhanas.
- Sow the seeds—either from a previous crop, purchased from the market, or ordered online if you’re growing them for the first time.
- Ensure the pond’s depth is between 4 and 6 feet, and keep the water stagnant at all times.
- Plant the makhana seedlings in the water between February and April. They can be treated like other nursery plants.
- Harvesting makhana is the most challenging step. You’ll need to gather the seeds from the pond’s bottom, where they settle in the muck.
- Dry the seeds under direct sunlight to remove moisture. During this process, seeds release up to 31% of their moisture content.
- Temporarily store the dried seeds for 20 to 24 days.
- Grade the seeds by dividing them into five to seven categories based on size. (You can skip this step if preferred.)
- Roast the seeds in an earthen or cast iron pan at a temperature of 250°C to 300°C, stirring constantly for 4 to 6 minutes.
- Store the roasted seeds in a dry place for 3 to 4 days. This allows the inner edible part (kernel) to naturally separate from the hard outer shell.
- Crack open the seeds by gently beating them with a wooden hammer to extract the kernels.
- Polish the kernels by rubbing them in a bamboo basket. This enhances their whiteness and crispiness.
