Material
To prepare Greek Lemon Rice for about 4 serving, collect the following material:
1 cup long grain white rice
2 cup chicken or vegetable broth
2 lemon peel and juice
2 tablespoons olive oil
1 small onion, finely chopped
2 garlic buds, finely chopped
2 bay leaves
1/4 cup fresh dill, chopped

Method
– Start by washing rice and soak under cold water to remove excess starch. Sieve well and keep separate.
– In a medium saucepan, heat olive oil on a medium flame. Add finely chopped onion and chopped garlic. Fry until the onion becomes transparent, which should take about 3-4 minutes.
– Add washed rice in the saucepan and fry for 2-3 minutes. This causes rice rash lightly roast, which increases their taste.
– Add chicken or vegetable broth and add bay leaves. Boil the mixture lightly.
– Reduce the heat, cover the saucepan and let the rice boil for about 15-18 minutes or until the liquid is absorbed and the rice is soft.
