How to protect yourself from dangerous temperatures

Keeping food between 5°C and 60°C for too long creates the most favorable conditions for bacteria. This temperature is also called the "danger zone". Try not to keep food in this range for too long.

Bacteria spread very quickly in certain items, such as raw or cooked meat, chicken, milk and its products, eggs, seafood, cooked rice, pasta, ready-made salads, pizza and rolls.

It is very important to store these things properly. Also, it is equally important to keep the canned food properly after opening it, otherwise it can get spoiled quickly.

The right way to store food

When buying cold things like milk or frozen food from the market, buy them last and keep them in the fridge as soon as you reach home. If the food is hot, do not put it in the fridge immediately. First let it cool down a bit, then keep it in the fridge.

Avoid re-freezing or using frozen items. It is better to eat them immediately after opening them. If you have thawed something in the microwave, avoid keeping it in the fridge again, as this increases the risk of bacteria growth.

Cleaning and segregating food

Keep leftovers separate from cooked food to prevent bacteria from spreading from one to another. Keep raw meat or chicken at the bottom of the refrigerator so that their juices do not drip onto other items. Use clean and sturdy airtight containers to store food.

If you find that any food has been at the "danger temperature" for more than 4 hours, throw it away without a second thought. Also keep an eye on the expiry date and don't let old items accumulate in the fridge.
