Talking about Eid, how can we forget this popular Mughlai dish? Biryani, the epitome of indulgence, features fragrant rice layered with succulent meat and aromatic spices.
India boasts a wide variety of Biryani such as Chicken Biryani, Hyderabadi Biryani, Kolkata Biryani, Awadhi Mutton Biryani, Keema Biryani, Malabar Fish Biryani and more.
Cut the chicken/mutton into small pieces and marinate it with yoghurt mixed with some spices and ginger garlic paste. Let it rest for a few hours.
In a separate pan deep fry onions till they turn golden brown.
Take the chicken and cook it in a pan until the colour changes to light brown and then add milk.
In another container boil some rice till it is 50 per cent cooked.
Take a separate container and layer chicken and rice one by one and top it up with some saffron milk.
Keep the pot in low flame and wait until the rice is cooked.
Serve hot with raita or salan.
Sewaiyan
Sewaiyan is another dessert served during the Eid festivities in Muslim households. It is something one can’t do without and simply can’t get enough of.
To make the sweet dish, start by roasting vermicelli till it gets dark brown.
Take it out and let it cool down for a few minutes.
Saute dry fruits and makhana till it gets crunchy.
Lastly, add some Coconut and be careful as it burns quickly.
In a large pan, add sugar, khoya, milk and water and mix thoroughly.
Place it on the burner and stir until it reaches the first boil.
Next up, Add the roasted vermicelli, dry fruits, makhana coconut mixture, and simmer on low for about 4-5 minutes before turning off.
Add some cardamom powder and cover the lid. Let it rest for a few minutes.
Serve hot and garnish with dry fruits.
Rose Sharbat
A sweet and fragrant drink made from the natural essence of roses during Eid in Muslim households. It has a delicate flowery flavour that is both refreshing and relaxing.
To make this refreshing drink, simply add flavour and rose petals in sugar syrup and mix well.
Now add milk and rose essence to the mixture.
And you’re all set.
To serve, fill 1/4th of the cup with the Rose Mixture and fill the rest with cold water.
Enjoy the refreshing drink chilled.
Mutton Shami Kabab
Eid festivities are incomplete without gorging on these tasty, juicy and soft Kababs and Mutton Shami Kebab is the perfect choice for this year’s celebrations. Made with minced mutton, aromatic spices and herbs, these Kababs will surely tantalize your taste buds.
After heating some oil, add cinnamon stick, mace, cloves, bay leaf, green cardamoms, black peppercorns and brown cardamom. Mix them well.
Next up, add Mutton Keema, red chilli powder and salt to the mixture and mix them thoroughly.
Add some soaked chana dal to the keema and let it cook for some time.
After the mutton and dal are cooked, grind the mixture and refrigerate for 30 minutes till it gets like a thick paste.
Add some green chillies, onions and lime juice to the paste.
Make small balls of the paste and refrigerate for 30 minutes.
In another pan, heat a tbsp of ghee and lightly fry the kababs till golden brown on all sides.
Serve them hot with green chutney.
