5-ingredient Eton Mess with homemade meringue is a 'winning combination' - ready in 1 hour

With strawberry season finally here, an Eton Mess pudding will become a go-to for many families. Beloved for its simple combination of ingredients, why not try to make your own meringue this year?

This from makes a simple meringue that's hard to get wrong. The notes said: "Few desserts say summer like Eton Mess. Crunchy meringue, whipped cream and strawberry sauce is a winning combination, best served al fresco."

Ingredients:

Two large egg whites

120g caster sugar

500g strawberries

450ml double cream

One tablespoon of icing sugar

Method:

Heat the oven to 120C or 100C Fan and line a baking tray with parchment.

Whisk the egg whites using an electric whisk until they reach stiff peaks and then add the sugar in three lots, re-whisking to stiff peaks every time.

Spoon dollops of the mixture onto the baking parchment, cook on the bottom shelf of the oven for one hour until the merginues are hard and peel away easily.

Blitz one-third of the strawberries to make a simple strawberry sauce.

Then, in a large bowl, whisk the cream with the icing sugar until it just holds its shape.

Next, roughly crush three-quarters of the merginues and tip them in with the chopped strawberries and stir, swirling through the strawberry sauce.

Dollop into bowls and then crush the remaining meringues, sprinkling the pieces over the top.

This Eton Mess will stay fresh in the fridge for a few days, but they will taste better when served immediately.
