1/2 cup boiled potatoes
1/2 cup coriander leaves
1/2 cup crushed roasted peanuts
2 tbsp ghee
1 1/2 cups amaranth
1/2 cup curd
rock salt as required
Step 1 Prepare the Batter
Take Rajgira/Amaranth flour in a mixing bowl, add potatoes, coriander leaves, curd, green chilli-ginger paste, crushed peanuts, rock salt, 2 tbsp ghee and enough water and whisk to make a lump-free batter. Add a little more water and mix well to get the required consistency.
Step 2 Pour the batter into the molds
Pour some ghee into each dent of the paniyaram mold and let it melt. Pour the batter into each well, cover and cook for 5-7 minutes or until cooked on the bottom.
Step 3 Cook the Paniyaram
Turn the paniyaram and cook for 5-7 minutes or till the other side is cooked. Make more Paniyaram in the same manner.
Step 4 Serve hot with coconut chutney
Put them in a serving plate, serve hot with coconut chutney.
