Mix vegetables – 3 cups
Grated ginger – 1 inch piece
Garlic cloves finely chopped – 4
Onion finely chopped – 1/2
Carrot finely chopped – 1
Capsicum chopped – 1/2
Sweet Corn – 3 tbsp
Finely chopped cabbage – 3 tbsp
Corn flour slurry – 1/2 cup
Chopped green onion – 2 tbsp
Crushed black pepper – 1 tsp
Oil – 3-4 tsp
Salt – as per taste
Recipe
– First of all, wash all the vegetables including onion, carrot, capsicum thoroughly and chop them finely. Also cut ginger and garlic into small pieces.
Now add mixed vegetables and 5 cups of water in a vessel. Add half a spoon of salt in it and keep it on the gas to heat.
Boil the vegetables on medium flame until they release their flavour. Boil them for at least 15 minutes.
After this, remove the vegetables and keep the vegetable stock aside in a vessel. Now put 3 teaspoons of oil in a pan and heat it on medium flame.
When the oil becomes hot, add finely chopped onion, garlic and ginger and fry. Saute all the ingredients until soft.
After this, add sweet corn, half capsicum and carrot and fry. After frying for a minute, add vegetable stock to it.
– Boil it for at least 5 minutes. After this add 3 tablespoons of leafy rice to it. Then prepare corn flour slurry.
For this, add 2 teaspoons of corn flour and half a cup of water in a bowl and mix it. Now add the prepared slurry to the soup and boil it for 2 minutes.
When the soup becomes thick, add black pepper powder, green onion and salt as per taste.
– After mixing it well, cook for 1 more minute and then turn off the gas. Ginger garlic soup is ready.
