Kala Chana Falafel: Black gram is quite nutritious and healthy foods that contain protein, fiber, vitamins and minerals. By eating this, the body gets many benefits. It helps in improving digestion. It makes the body healthy by keeping blood sugar under control. It can be eaten in many ways. Black Chana – 2 cups (soaked overnight)
Onion – 2 (finely chopped)
Garlic buds-6-7 (finely chopped)
Green Chilli – 3 (Finely chopped)
Coriander leaves-4-5 tablespoons (finely chopped)
Cumin powder – 2 tablespoons
Roasted cumin – 2 teaspoons (powder)
Water – as per need
salt to taste
Baking Soda – 1/2 teaspoon
Flour or gram flour – 4 tablespoons
Sesame or whole cumin – 3 teaspoons (for fry)
Olive oil – to fry
Wash black gram and clean it thoroughly and soak it in clean water overnight. The next day, wash them again and take them. There is no problem in preparing the paste due to the gram becoming soft.
Prepare a coarse paste by putting soaked black gram in a grinder. While making the paste, use only a little water so that the paste remains thick.
Add garlic, green chillies, onions, coriander leaves, cumin powder, and roasted cumin and salt to the prepared paste and mix well. This mixture should be thick so that fruit can be made well. If the mixture is more by mistake, then add a little gram flour or maida to it, it will help to bind it.
Check a little mixture and the taste is fine or not.
Make small balls from the prepared mixture. They can also be made in flat shape. Just keep their size small so that they cook well inside.
Heat oil in pan. Add sesame and whole cumin seeds to the oil and fry it lightly. Now put the prepared fruit balls in hot oil and keep the flame slow and fry them till they become golden and crisp.
You can add 4-5 fruit at a time to maintain the temperature of the oil.
Take out the prepared fruit on the kitchen towel so that extra oil is absorbed. Now serve them hot with green chutney.
