Material (Kharboje ki kheer recipe)
- Ripe melon – 1 cup (light mashed in grated or grinder)
- Milk – 1 liter
- Sugar-3-4 tablespoons
- Cardamom Powder – 1/2 teaspoon
- Dryfruits – Chopped (almond, pistachios, cashews)
- Saffron (optional) – some threads

Method (Kharboje ki kheer recipe)
- Boil the milk on medium heat in a heavy bottom pan and cook till it thickens. Keep stirring in it continuously so that it does not appear in the bottom.
- When the milk becomes slightly thick, then add sugar and cardamom powder to it. You can also add saffron if you want.
- Allow the milk to cool down (lukewarm or up to room temperature), because adding melon in hot milk can change its taste.
- Now add mashed melon in cold milk and mix well.
- Allow the kheer to cool into the fridge for some time so that it tastes further. Garnish by adding dry fruits on top and serve cold melon kheer.
