Ingredients for Garlic Chutney

To make this tangy delight, you’ll need:

  • 10–15 garlic cloves
  • 1 teaspoon red chili powder
  • A pinch of black salt
  • 3–4 green chilies (finely chopped)
  • Fresh coriander (finely chopped)
  • A pinch of turmeric powder
  • Coarsely ground coriander powder
  • 1 teaspoon clarified butter (ghee)
  • Juice of one lemon
  • ½ teaspoon cumin seeds
  • A pinch of asafoetida (hing)

Step-by-Step Garlic Chutney Recipe

  1. Prepare the Garlic: Peel and wash the garlic cloves thoroughly. Pat them dry using a clean cloth to remove any moisture.
  2. Grind the Garlic: Coarsely crush the garlic cloves using a mortar and pestle for a rich, authentic flavor. Alternatively, use a grinder for convenience.
  3. Make the Paste: In a bowl, mix the crushed garlic with red chili powder, black salt, turmeric, and coarsely ground coriander powder. Add a small amount of water to make a smooth paste.
  4. Cook the Mixture: Heat mustard oil or clarified butter in a pan. Add cumin seeds and let them splutter, followed by a pinch of asafoetida.
  5. Add Green Chilies: Toss in the finely chopped green chilies and sauté for a few seconds.
  6. Sauté the Garlic Paste: Add the prepared garlic paste to the pan. Cook on medium heat, stirring occasionally, until the oil separates from the mixture.
  7. Finish with Lemon and Coriander: Turn off the heat. Add freshly squeezed lemon juice and garnish with finely chopped coriander.
